A twist on Applebee's Santa Fe Stuffed Chicken

I'm back again! It's been a long week, and I didn't cook as much at all as I was supposed to.. but I did manage to get a recipe for you guys :)

Originally, this was Applebee's Santa Fe Stuffed Chicken. However, we twisted it a little and made it our own to make it easier to make in the home!

Ingredients:
skinless, boneless chicken breast halves
1 package (8 ounce or larger) Monterey Jack cheese*
1/2 cup butter, melted
1 cup Italian seasoned bread crumbs
1 1/2 tablespoon grated Parmesan cheese

*We used Colby Jack cheese, just because it's our favorite; and it worked out great!

Directions:
Preheat oven to 400 degrees F. Cut the cheese into eight (8) slices. Flatten the chicken breasts out to about 1/4inch thick - if the chicken starts to tear, then they're getting too flat. Wrap the flatten chicken breasts around the cheese slices, and fasten together with wooden toothpicks. Dip the secured chicken pieces in the melted butter (can use egg, if desired), and cover with bread crumbs. Place covered chicken in a 13x9 baking dish, and bake for 25-30 minutes.
