A twist on Applebee's Santa Fe Stuffed Chicken

I'm back again! It's been a long week, and I didn't cook as much at all as I was supposed to.. but I did manage to get a recipe for you guys :)

Originally, this was Applebee's Santa Fe Stuffed Chicken. However, we twisted it a little and made it our own to make it easier to make in the home!

Ingredients:
skinless, boneless chicken breast halves
1 package (8 ounce or larger) Monterey Jack cheese*
1/2 cup butter, melted
1 cup Italian seasoned bread crumbs
1 1/2 tablespoon grated Parmesan cheese

*We used Colby Jack cheese, just because it's our favorite; and it worked out great!

Directions:
Preheat oven to 400 degrees F. Cut the cheese into eight (8) slices. Flatten the chicken breasts out to about 1/4inch thick - if the chicken starts to tear, then they're getting too flat. Wrap the flatten chicken breasts around the cheese slices, and fasten together with wooden toothpicks. Dip the secured chicken pieces in the melted butter (can use egg, if desired), and cover with bread crumbs. Place covered chicken in a 13x9 baking dish, and bake for 25-30 minutes.

Bread Crumb Sirloin

I have to say.. this is definitely one I just made up myself. I literally walked into the kitchen, opened the cabinets, and found some seasonings to throw on! That's one of my favorite things about cooking, to be honest. I love just making my own combination of things and hoping it turns out good; because I've yet to have a bad experience with it!

So tonight, I made an Italian bread crumb mixture covered sirloin.

Ingredients:
1 package sirloin chops
1 cup Progresso Italian style bread crumbs
1 tsp Grill Mates Mesquite seasoning
1 tsp Grill Mates Montreal Steak seasoning
1/4 tsp black pepper
1 cup butter, melted (can use egg if desired)

Directions:
Preheat oven to 350 degrees (F). Mix dry ingredients in a bowl. In a separate bowl, melt butter in the microwave. Dip sirloin in butter until completely covered, then cover in bread crumb mixture. Place in pan. Continue until all sirloin chops are used. Spoon extra butter onto now covered chops, then add extra bread crumbs left in the bowl for some extra crunch. Put in the oven uncovered, and bake for 30-35 minutes.



Pizza Balls

Another Pinterest recipe! This one is fantastic for football season, or if you're hosting or going to a party.. it's a huge hit!

Ingredients:
2-3 cans of biscuits (10 per can)
56 pepperoni slices
1 block Colby cheese
1 egg, beaten
Parmesan cheese, grated
Italian seasoning
Garlic powder
1 jar pizza sauce

Directions:
Preheat oven to 425 degrees (F). Cut the block of cheese into 28 squares. Flatten a biscuit out and stack two pepperoni slices, one piece of cheese, and two more pepperoni slices on top. Gather the edges of the biscuit and tuck in to form a ball. Line up rolls in a 9x13 pan. Brush the tops with the beaten egg. Sprinkle with parmesan cheese, Italian seasoning, and garlic powder. Bake in the oven uncovered for 18-20 minutes.




Easy & Creamy White Chicken Enchiladas

This recipe came from Pinterest, and I must say it's a favorite in the Glass household. It's so easy to make! We love Mexican, but the Mexican places here in Jacksonville just really aren't too up to par with what we're used to. I know, Alabama isn't too much closer to Mexico.. but they've got better Mexican food!

Ingredients:
6-8 corn tortillas (enchilada size)
1 pre-cooked rotisserie chicken, shredded (you can use 1pkg of chicken breasts, cooked, instead)
1c sweet corn
4c shredded Mexi-blend cheese, divided in half
3tbsp butter
3tbsp all-purpose flour
1 1/4c chicken broth
1 10oz can Campbell's cream of chicken
1c sour cream
1/4 tsp black pepper
1/4 tsp salt

Directions:
Preheat the oven to 350 degrees (F). Fill the center of each tortilla with a handful of chicken, one tbsp of corn, and a pinch of cheese. Roll and put in a baking dish, seam down. Repeat until all tortillas are used and in the baking dish. Melt butter over medium heat. Add flour, and whisk to a thick paste. Add chicken broth, cream of chicken, sour cream, salt, and pepper. Whisk gently for five minutes until warm and smooth. Pour sauce over enchiladas and add remaining cheese over the top. Bake in the oven uncovered 25-30 minutes. Serve with extra sour cream or salsa, if desired!




Taco Ring!

A lot of people have been asking for my recipes.. so I decided to start a blog to post the recipes I cook, my experiences with cooking, how well it works.. what my husband and I like /don't like, etc!

The first recipe I'll post is definitely a childhood favorite of mine. My mom made it for us all the time, especially for a football day treat; and now I love making it all the time. I've already shared it with a few friends, and they made it for their husbands who loved it!

Taco ring -

Ingredients:
2 packages of crescent rolls
1 lbs of hamburger meat
1 package taco seasoning
Salt and pepper to taste
1 tsp minced onions
Shredded cheese, optional
Sour cream, optional
Salsa /taco sauce, optional

Directions:
Cook hamburger meat in skillet until brown. Drain grease. Add 1 tsp of minced onions and salt and pepper. Add 1 package of taco seasoning, along with water according to package.

Spray pizza pan with Pam (unless using a stone)! Unroll crescent rolls and lay around a pizza pan (a rectangle pan is fine too; I used one in the picture below, because we didn't have a pizza stone yet!). Stuff crescent rolls with hamburger meat, add shredded cheese, if desired, and fold crescent rolls under. Bake in the oven according to crescent roll package, until crescent rolls start to brown. Remove from oven and let cool. Cut apart, as crescent rolls will form together slightly around the pan. Garnish with sour cream and /or taco sauce, if desired.
